Napolitaines are melt-in-the-mouth Mauritian shortbread sandwiches. Traditionally, they consist of a plain shortbread with a guava jam filling and a pink sugar glaze.
At Ever Peckish, we have put our own twist to the napolitaine- with an array of flavours, fillings, glazes and toppings.
Sweet Napolitaines
Our sweet napolitaines come in glazed and unglazed versions. Popular combinations:
Glazed napolitaines-
Raspberry Vanilla: vanilla bean shortbread, raspberry jam, topped with freeze dried raspberries
Cardamom & Rose: cardamom shortbread, apricot jam, rose water glaze topped with pistachios & dried rose petals
Orange Pistachio: citrus shortbread, orange glaze and candied orange and pistachio
Caramel: vanilla shortbread, dulce de leche, dark sugar glaze and unrefined sugar crystals
Unglazed napolitaines-
Chocolate/ almond shortbread, piped chocolate ganache topped with nuts & metallic sugar crystals
Savoury napolitaines
Our savoury take on the sandwich make for delightful and gorgoeus amuse-bouches. They are filled with flavoured cream cheese or goatโs cheese. Popular combinations:
Lemon thyme shortbread with pesto cream cheese
Chilli cheese shortbread with harissa cream cheese
Turmeric, cumin and fennel shortbread with goat`s cheese filling
Other fillings: coriander and chilli cream cheese, olive cream cheese
