If you like litchis, this drink is the perfect summer cooler for you. Delicate, sweet and utterly refreshing, it is our favourite drink of the season. Our preferred version of this fizzy litchi cooler is non-alcoholic but it can be easily converted into a frozen daiquiri with the addition of a splash of rhum.
It is hard to describe litchis: fleshy and juicy they have a delicate sweet taste reminiscent of strawberries and watermelon. This fizzy litchi cooler is nostalgia in a glass for us! Having grown with two litchi trees in his parentโs garden, he is full of stories surrounding litchis.

Do I have to freeze the litchis?
Yes, we highly recommend freezing the litchis. Since litchis are fleshy with a slightly fibrous centre, this drink works best as a slushy.
Can I used frozen canned litchis?
Although fresh litchis are best, canned litchis also work great for this drink.
How do I turn this drink into a cocktail?
Simply add some rhum to it, and you have yourself a frozen litchi daiquiri.
Fizzy Litchi Cooler
Ingredients
- 1 dozen litchis, peeled, de-seeded and frozen
- 6-8 ice cubes
- 1 tsp demerera sugar, plus extra for the glass rim (can be substituted for brown sugar)
- sparkling water
- 2 cucumber strips (optional decor)
Instructions
- Blend the frozen litchis, ice cubes and sugar together.
- To make the sugar rimmed glasses, rub a piece of litchi or lemon around the rim of the glass. Turn the glass upside down in a bowl of sugar.
- Dollop the frozen litchi ice mixture into the glass, being careful not to touch the sugar rim.
- Top with sparkling water.
- Decorate with a folded cucumber strip skewer.
