As the festive season rolls on and we prepare to welcome 2025, our mango pineapple margarita take center stage in our celebrations, offering a sip of paradise with every glass. This recipe is a tribute to two of our favorite things: margaritas and Mauritian fruit confit.
Mauritian fruit confit is a beloved island snack. A mouthwatering mix of semi-ripe pineapple, mango, and other tropical fruits, seasoned with chilli, salt, and tamarind. It is a symphony of sweet, tangy, salty, and spicy notes. Confit is sold from street vendors across the island. However, no beach trip feels complete without a bag of confit from the seaside vendors.
A margarita, with its tangy lime, smoky tequila, and sweet undertones, is already a crowd-pleaser. Add the salty rim, and it becomes a sensory delight. With taste profiles very similar to confit, it only made sense to combine the two. We infuse our margaritas with the flavours of confit: muddling fresh mango and pineapple, then mixing it with tequila, lime juice, and a touch of chilli-infused syrup. Serve it in a glass rimmed with chili-lime salt for the perfect kick. Whilst this is not an original combination by any means, it is our take on a mango pineapple margarita.

Mango pineapple margarita
Ingredients
- ยฝ cup fresh pineapple chopped
- ยฝ cup fresh semi-ripe mango chopped
- 100 ml tequila
- 50 ml chilli syrup
- 40 ml lime juice
- pinch tamarind paste optional
- 2-3 tbsp chilli salt
- ice
For the chilli syrup
- โ cup sugar
- โ cup water
- 2-3 chillies
Instructions
For the chilli salt rim
- Run a lime wedge around the rim of each glass.
- Place the chilli salt in a shallow saucer. Dip the rim on the glass into the chili salt and set aside.
For the margarita
- In a sturdy mixing glass or cocktail shaker, add the pineapple and mango chunks.
- Use a muddler or the back of a wooden spoon to thoroughly crush the fruit, extracting as much juice as possible.
- Strain the muddled fruit through a fine mesh sieve into a shaker, pressing down with a spoon to extract the liquid. Discard the solids.
- Add tequila, lime juice, and chili-infused simple syrup to the shaker with the fruit juice.
- Add ice and shake vigorously for 15-20 seconds.
- Fill prepared glasses with fresh ice.
- Strain the margarita mixture into the glasses.
- Garnish with a lime wedge or a slice of mango or pineapple. Serve immediately and savor the tropical vibes!
