Mango pineapple margarita

Sweet mango, juicy pineapple, a hint of chilli, and a classic salty rim come together for the ultimate summer margarita.

Ingredients
  

  • ½ cup fresh pineapple chopped
  • ½ cup fresh semi-ripe mango chopped
  • 100 ml tequila
  • 50 ml chilli syrup
  • 40 ml lime juice
  • pinch tamarind paste optional
  • 2-3 tbsp chilli salt
  • ice

For the chilli syrup

  • cup sugar
  • cup water
  • 2-3 chillies

Instructions
 

For the chilli salt rim

  • Run a lime wedge around the rim of each glass.
  • Place the chilli salt in a shallow saucer. Dip the rim on the glass into the chili salt and set aside.

For the margarita

  • In a sturdy mixing glass or cocktail shaker, add the pineapple and mango chunks.
  • Use a muddler or the back of a wooden spoon to thoroughly crush the fruit, extracting as much juice as possible.
  • Strain the muddled fruit through a fine mesh sieve into a shaker, pressing down with a spoon to extract the liquid. Discard the solids.
  • Add tequila, lime juice, and chili-infused simple syrup to the shaker with the fruit juice.
  • Add ice and shake vigorously for 15-20 seconds.
  • Fill prepared glasses with fresh ice.
  • Strain the margarita mixture into the glasses.
  • Garnish with a lime wedge or a slice of mango or pineapple. Serve immediately and savor the tropical vibes!
