Cinnamon Rosemary Gin and Tonic

Refreshing gin and tonic with a cinnamon stick, rosemary twig and candied orange slice to evoke the sweet, woody flavours of Christmas.

Ingredients
  

  • 1 orange
  • 2 tsp dark brown sugar
  • 4 sprigs rosemary
  • 180 mls (4 jigger measures) gin (around 12 tablespoons)
  • tonic water
  • ice cubes

Instructions
 

  • In a tumbler, stir and dissolve the dark sugar in the gin.
  • To the serving glasses, add a handful of ice cubes, a cinnamon stick, a sprig of rosemary and a slice of candied orange (see note for instructions to make candied orange).
  • Pour over the gin; top with tonic, and enjoy cold.

Notes

If you do not have candied orange slices, you can easily make some.  To 1/2 cup white/brown sugar, add 1/2 cup water and heat until all the sugar is dissolved. Add thin slices of orange to the syrup and simmer for 20 minutes, turning once. Place the orange slices on a rack and allow to dry overnight. Store in the fridge and use within a couple of days.
