Add all ingredients besides the coriander and salt and cook uncovered on medium high for 3-5 minutes or until lightly charred. Turn and cook on the other side for another 3-5 minutes. (for oven-roasting instructions, see note below)°
Allow to cool lightly and blend all pan roasted ingredients and coriander together.
Season and serve.
Notes
To perform the roasting in an oven, turn on the grill at 200 degrees C. Roast the tomatoes, garlic and onion in a single layer on a sheet tray for 5-8 minutes or until lightly charred.
